Quick 20 minute dinner! Cheddar and Broccoli rice with Salmon Fillets

Today I found out that my friend and neighbor lost her father a couple of days ago.  I wanted to do something nice so decided to make her a dinner for tonight.  Not much but at least it takes one worry away.


However, I had already planned our dinner and had it cooking.  I really didn't want to start cooking a second meal.  Looking through the cupboards I found I had a package of Knorr Cheddar and Broccoli Rice and it could be cooked in the microwave.  So I grabbed a bowl and started it cooking.  While it was cooking I took out two frozen salmon fillets and started thawing them out in a bowl of water. 


Once the rice was done I tossed the fillets into a ziplock zip and steam bag, added in a little lemon pepper seasoning and threw them in the microwave for about 5 minutes. 


While they were cooking I put the rice into a large plastic container (not pretty but I don't have to worry about getting one of my nice dishes back), then I topped it with the cooked salmon. 


Ready to go!  It actually looked and smelled wonderful and my neighbor was very pleased by the gesture.  I wish I had taken a picture to show off but I was in a hurry.

Am I really old

Or is Burger Kings new kids meal commercial in really poor taste?    I heard this today before I actually watched it.    At the time, I wondered what on earth big butts had to do with hamburgers and fries but then realized they have everything to do with hamburgers and fries.   That seemed a little ironic.  


I put it out of my head until I SAW the commercial and realized it was promoting a kids meal!  Women shaking their butts is supposed to sell meals to kids now?   Who on earth thought of this marketing concept?


Watching the "King" trying to do a rap song was enough to make my jaw hit the floor and then it just got worse and worse.   He was measuring some womans square butt!  What on earth?


Needless to say.  We won't be frequenting (that word takes on a whole new connotation after watching the commercial) Burger King anymore.   I imagine I will also have to explain to my eight year old just why this commercial is not cute or funny, thanks BK!

Embrace your beauty

I've been thinking about this a lot lately.   There has never been a time in my life where I felt beautiful.   Well okay, a couple of days in my early 20's and a few times in my early 30's..  Never a consistent feeling of being beautiful though.


Now my husband and my MIL always feel they look great no matter what.   I want to be that way.  I look back at pictures from when I was younger and think "why didn't I realize at the time that I was pretty?".   


Why do some people always feel they are beautiful or pretty or good looking or whatever you want to call it while others don't see themselves as they truly are?


I don't have the answers but I do know that I am starting to realize that I should have enjoyed feeling pretty when I was younger.   Okay, that's not my point.. I should enjoy feeling pretty right now... I am realizing that I have missed out on lots of "feeling pretty" times and that in ten years I will look back at where I am today and wonder why I didn't feel pretty..


Embrace your beauty for where you are today and feel happy about it...let the world take pictures of you whether you like it or not!  Someday you will be glad you did..

Do you remember your favorite toy when you were growing up?     The slinky?   Lincoln Logs?  Legos? 


A lot of the toys are still around and a lot you only find in the rare yard sale or maybe (Heaven forbid) an antique store.    Katie got an Easy Bake oven for Christmas this year.   It's such a kick to see her take pride in making dessert for her family or showing her friends how to make brownies.  I remember my Easy Bake oven and also remember that feeling of "Im making dessert for the whole family"..  Im sure I didn't make dessert for everyone since it really takes around half an hour to make just one cookie.

It is great to know that some things just never change and that our kids can create some of the same memories we did when we were little.
